Blueberry Zucchini Muffins

(the hostess will sure appreciate breakfast for the next day!
Wrap in at tea towel…tied with rich cotton grosgrain ribbon)


Preheat oven 350 degrees

2 eggs lightly beaten
1/2 c vegetable oil
1 1/2 tsp. vanilla extract
1 1/4 cup sugar
1 1/2 cup shredded zucchini
1 1/2 cup flour
1/2 tsp - salt
1/2 tsp - baking powder
½ tsp. baking soda
1/4 tsp ground cinnamon
2 cups fresh blueberries

1. mix dry ingredients in large bowl
2. mix wet ingredients in another bowl (except blueberries)
3. slowly add dry ingredients to wet and mix thoroughly
4. fold blueberries into mixture
5. lightly coat foil muffin baking cups with cooking spray
6. spoon muffin mixture into cups (3/4 full)
7. bake for 45 - 55 minutes
8. let cool
9. enjoy!!
