Rustic Apple and Pear Tart

Rustic Apple and Pear Tart

Serves 8 
Preheat oven 425 degrees  

1 package pie crust  
1 egg white, lightly beaten  
1/2 cup sugar  
2 tablespoons cornstarch  
3 tablespoons fresh orange juice  
2 teaspoons ground cinnamon  
2 medium pears - peeled and thinly sliced  
2 Granny Smith apples - peeled, cored and thinly sliced  
extra sugar to sprinkle on top of tart  

Directions:
STEP ONE:
Line cookie sheet with parchment paper  
Lightly dust with flour  
Place pie crust on parchment  
Brush with egg whites  

STEP TWO:
In medium bowl, add sugar, cornstarch, orange juice, and cinnamon and stir  
Add pears and apples to mixture and lightly toss  

STEP THREE:
Spoon pear/apple mixture on to middle of pie crust, leaving a 2" border of crust  
Fold edges up and brush with remaining egg white  
Sprinkle with sugar  

STEP FOUR:

Bake for approximately 20 minutes  
Cool before serving
